How do u mean taking a seizure/fit? His black beard could either mean he's frustrated or he caught reflection in the glass also at 1 year old i believe its an adolescent stage not 100% sure on that
It is quite normal for beardies to go through stages of eating and not eating u mite find that they will on eat certain things and not eat thinga that they used to its nothing to worry about aslong as his temps are all ok and u have food in there for him even if he doesnt eat it often enough

Try n make the veg bowl colourful with different fruit and veg but dont put loads of different bits jus try with 3/4 different fruits n veg and alter it slightly try new things
