When my two were both juvys they were eating bugs and bugs and bugs more than veg now the older they got i balanced their diet to more fruit and veg and bugs now and again so they do get their meat.     It is quite normal for beardies to go through stages of eating and not eating u mite find that they will on eat certain things and not eat thinga that they used to its nothing to worry about aslong as his temps are all ok and u have food in there for him even if he doesnt eat it often enough

    Try n make the veg bowl colourful with different fruit and veg but dont put loads of different bits jus try with 3/4 different fruits n veg and alter it slightly try new things
