Calcium with D3 is fine 3-4 times a week. If you can find calcium with out than use that on the days you don't use D3.
Dust your crickets. Calcium helps prevent bone softening and MBD which are both terrible.
My UVB is over top my mesh lid too.

On the greens question there are lots you can try!
Babies usually eat mostly crickets and other insects but as they grow and get older they eat more veggies and fruits and less insects.
Some staple greens to try:
Collards, endive, mustard greens, dandelion greens...
You have a very sweet looking beardie there!
I am not sure about the color thing either but I would be anxious to learn too!
When I had mantids the color always was more prominent after each molt (shed). Perhaps tbat is the same with beardies.... Idk!
